I am not blindly sorting horses by their total number of stat bars - availability matters too. A technically perfect horse that only becomes available late in the story is less useful to you than one you can ride through several major chapters.

1. Missouri Fox Trotter - Best Horse in RDR2

The Missouri Fox Trotter is the classic pick for the best horse in Red Dead Redemption 2. It has the highest base speed among my top five, excellent stamina, decent health, and enough acceleration that it never feels sluggish. More importantly, the Amber Champagne version becomes available after Chapter 4, so you can actually spend a meaningful part of story using it.
How to Get the Missouri Fox Trotter
There are two variations that are the easiest to get Story Mode options, and both have the same stats:

I personally prefer the Amber Champagne. The Silver Dapple Pinto looks better to me, but unlocking it after the main story makes it much less useful as a progression horse.

If I ranked the horses purely by their stat sheets, the Rose Grey Bay Arabian would win. It has 7 Health, 7 Stamina, 6 Speed, 6 Acceleration, and Elite handling. No other Story Mode horse gives you a more complete statline.
How to Get the Rose Grey Bay Arabian
Location: Blackwater Stable
Available: After Epilogue Part 1
That unlock requirement is the entire reason I put it second. By the time you can buy the Rose Grey Bay Arabian, the story gets close to being over. It is outstanding for finishing side content, but calling it the best horse for a full playthrough is a stretch. I also personally prefer the larger frame of a Missouri Fox Trotter or Turkoman. Arabians have fantastic handling, but they look tiny under MC. Statistically, though, this is technically the strongest horse in Story Mode.

The Gold Turkoman is the horse best suited for combat-heavy missions and dangerous free roaming in Lemoyne. You get 7 Health and 6 Speed, which means the horse is fast without being fragile. That makes it much more forgiving during ambushes and predator attacks, which there is no lack of in this game.
How to Get the Gold Turkoman

Available: After Chapter 4
The Dark Bay and Silver Turkomans are also excellent, but they are normally restricted to later progression. The Gold coat is the one you’ll most likely to use since it’s available much earlier. Another great thing about Turkoman compared to the Arabian is that extra health is sometimes much more useful than a bit more handling. For the second half of the story, this is probably my personal favorite horse.

The Black Arabian is the most balanced premium Arabian you can use during the main story. Every major stat sits at 6, and Elite handling makes it more responsive than Standard and Racehorse variations. It is especially good in forests and tight terrain where the difference in handling becomes much easier to notice.
How to Get the Black Arabian
Location: Saint Denis Stable
Available: After Chapter 4
I rank it above the famous White Arabian for one simple reason: it is actually better. The Black Arabian has more Health and Stamina while keeping the same Speed, Acceleration, and Elite handling. Once the Saint Denis Stable starts selling it, there is no statistical reason to treat the White Arabian as the stronger horse. The caveat is that around the same stage of progression, you can choose between:

Buell is one of those horses I would rank higher than the raw numbers would suggest. He has a very balanced 6 Health, 6 Stamina, 5 Speed, and 5 Acceleration. There is no major weakness, and the unique Cremello Gold coat makes him immediately recognizable and story-relevant.
How to Get Buell
Buell is obtained by completing The Veteran IV, the final mission in Hamish Sinclair's Stranger questline. He cannot simply be purchased from a stable. I rate Buell this highly for three reasons:

He costs nothing.

He is tied to one of the game's best side stories that you probably want to complete anyway.
There is one practical issue. Buell comes from a late Stranger mission, so think carefully about when you finish the questline if you want to keep him for a particular part of the story.

Missouri Fox Trotter - Best Online Horse Overall
The Missouri Fox Trotter remains the most common recommendation in Red Dead Online. It is fast, has enough stamina for constant travel, and does not force you into one specific playstyle. You can use it for:

Norfolk Roadster - Highest Speed Horse
The Norfolk Roadster is the first horse on the list missing from Story Mode rankings. Top-tier coats combine excellent Speed and Acceleration, making the breed perfect for players who spend most of their time crossing large distances and competing in races.
Turkoman - Best Online Combat Horse
The Turkoman works just as well in Online as it does in Story Mode. You get the speed of a premium horse combined with much higher Health than most pure racing breeds. I would rank the breed rather than one specific coat in Online because you have more variations than in Story Mode.
Mustang - Best Horse for the Money
The Mustang deserves much more attention in Online than it gets in Story Mode rankings. The better Online coats have excellent Health and Stamina stat lines while also offering good enough speed for almost everything.
Black Arabian - Best Handling Online Horse
The Black Arabian remains the handling specialist.
Elite handling makes it extremely responsive, especially:

The problem is value.
Red Dead Online gives you more top-tier alternatives than Story Mode, so paying a premium just for Elite handling becomes harder to justify.
I would still recommend it to players who genuinely care about responsiveness. I just would not call it the automatic best horse because the price tag says so.
What Is the Fastest Horse in RDR2?
In Story Mode, the Missouri Fox Trotter and Brindle Thoroughbred both have a base Speed rating of 7. In Red Dead Online, the Norfolk Roadster is also making the list as one of the best pure speed options once you have access to its better coats.
What Is the Best Free Horse in RDR2?
For Story Mode, the White Arabian is still the best free pick. You can tame it near Lake Isabella and get:
